I just finished preparing my food for this week. All of my veggies are cut, frittatas are baked, rice is steamed, and protein is cooked. Being prepared ahead of time is one of my keys to sticking to healthy nutrition. If I am unprepared, I am much more likely to grab something less than desirable to snack on while I try to find a proper meal. Yes, the more relaxing thing to do this afternoon would have been to just enjoy my day instead of spending 4 hours standing in my kitchen, but by spending the time today, I save food prep time later.

I actually enjoy my Sunday cooking sessions and I was fortunate to have a day at home to prepare for the week. We have been travelling so much over the past few months that I have had to shop and cook throughout the week, making it a little more stressful after a long commute and an even longer day at work.

If you find it hard to prepare your food on the weekend, start with smaller things like cooking your protein. I find it extremely easy to find carbohydrates like starches and fruits on the go, but protein is the tough one. If I find myself short on time, protein is my #1 priority. I will spend just a few minutes to throw several chicken breasts or fillets of tilapia into a baking dish with seasoning and letting it bake while I am doing other things around my house. When it comes out, I let it cool and then immediately portion it out and store it in containers. That way I can easily grab it when I am packing my lunch for the week.
