Thumbprint Cookies

Ingredients:thumbprint cookies

  • 1 1/3 cups organic butter
  • 1/3 cup honey
  • 2 egg yolks (reserve egg whites for later)
  • 1 teaspoon vanilla
  • 2 cups whole wheat flour (2 cups)
  • grated hazelnuts (1/3 cup whole nuts)
  • Jam , any clean jam that you like 

Directions:

  • Beat together your butter, honey, egg yolks, and vanilla till creamy.
  • Fold flour under.
  • Allow to chill in fridge for 2-3 hours.
  • Roll a 1/2 walnut sized portion of dough into a ball. Form thumbprint area in the middle.
  • Roll in egg whites, then in hazelnuts.
  • Fill with jam and bake at 325 degrees F. for approximately 20 minutes.
