Thumbprint Cookies
Ingredients:
- 1 1/3 cups organic butter
- 1/3 cup honey
- 2 egg yolks (reserve egg whites for later)
- 1 teaspoon vanilla
- 2 cups whole wheat flour (2 cups)
- grated hazelnuts (1/3 cup whole nuts)
- Jam , any clean jam that you like
Directions:
- Beat together your butter, honey, egg yolks, and vanilla till creamy.
- Fold flour under.
- Allow to chill in fridge for 2-3 hours.
- Roll a 1/2 walnut sized portion of dough into a ball. Form thumbprint area in the middle.
- Roll in egg whites, then in hazelnuts.
- Fill with jam and bake at 325 degrees F. for approximately 20 minutes.
