These days, you can’t go anywhere without hearing about the ketogenic diet. Celebs like Kourtney Kardashian and Halle Berry have done it, Pinterest is flooded with recipe ideas for it, and #keto has been used more than 6 million times on Instagram. There’s definitely something behind all the hype. If the diet is done right, you can lose a substantial amount of weight. If you’re ready to give the keto diet a try (or even just experiment with some keto recipes), start with some of our favorite meals in the recipes ahead.

Keto Mushroom Omelette

Ingredients- 3 eggs, 1 oz. butter for frying, 1 oz. shredded cheese, 1⁄5 yellow onion, 3 mushrooms, salt and pepper

Instructions

  1. Crack the eggs into a mixing bowl with a pinch of salt and pepper. Whisk the eggs with a fork until smooth and frothy.
  2. Add salt and spices to taste.
  3. Melt butter in a frying pan. Once the butter has melted, pour in the egg mixture.
  4. When the omelet begins to cook and get firm, but still has a little raw egg on top, sprinkle cheese, mushrooms and onion on top (optional).
  5. Using a spatula, carefully ease around the edges of the omelet, and then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelet on to a plate.

 

Keto Western Omelette

Ingredients- 6 eggs, 2 tablespoons heavy whipping cream or sour cream, salt and pepper, 3 oz. shredded cheese, 2 oz. butter, ½ yellow onion, finely chopped, ½ green bell pepper, finely chopped, 5 oz. smoked deli ham, diced

Instructions

  1. In a mixing bowl, whisk eggs and cream/sour cream until fluffy. Add salt and pepper.
  2. Add half of the shredded cheese and mix well.
  3. Melt the butter in a frying pan on medium heat; sauté the diced ham, onion and peppers for a few minutes. Add the egg mixture and fry until the omelet is almost firm. Be extra mindful not to burn the edges.
  4. Reduce the heat after a little while. Sprinkle the rest of the cheese on top and fold the omelet.
  5. Serve immediately… and enjoy!

 

Jill’s Cheese-Crusted Omelette

Ingredients- Omelet : 2 eggs, 2 tablespoons heavy whipping cream, 1 tablespoon butter or coconut oil, salt and ground black pepper, 3 oz. mature shredded cheese or sliced – Filling : 2 mushrooms, sliced, 2 cherry tomatoes, sliced, 2 tablespoons cream cheese, ½ oz. baby spinach, 1 oz. deli turkey, 1 teaspoon dried oregano

Instructions

  1. In a bowl, whisk together eggs, cream and salt and pepper.
  2. Heat up a dollop of butter in a non-stick frying pan. Spread out the cheese evenly in the pan, so it covers the entire bottom. Fry on medium heat until bubbly.
  3. Carefully pour the egg mixture over the cheese and lower the heat. Cook for a few minutes without stirring.
  4. Fill one half with mushrooms, tomatoes, baby spinach, cream cheese, turkey and oregano. Fry for a few minutes more.
  5. When the egg mixture starts to set (it can still be quite loose on top, but not too loose), turn the empty half over the topping side, forming a crescent. Fry for a few more minutes and enjoy!

 

Keto Mexican Scrambled Eggs

Ingredients- 6 eggs, 1 scallion, 2 pickled jalapeños, finely chopped, 1 tomato, finely chopped, 3 oz. shredded cheese, 2 tbsp butter, for frying, salt and pepper

Instructions

  1. Finely chop the scallions, jalapeños and tomatoes. Fry in butter for 3 minutes on medium heat.
  2. Beat the eggs and pour into the pan. Scramble for 2 minutes. Add cheese and seasonings.

 

Keto Pancakes with Berries and Whipped Cream

Ingredients- 4 eggs, 7 oz. cottage cheese, 1 tbsp ground psyllium husk powder, 2 oz. butter or coconut oil

Toppings– 25 tsp fresh raspberries or fresh blueberries or fresh strawberries, 1 cup heavy whipping cream

Instructions

  1. Add eggs, cottage cheese and ground psyllium husk powder to a medium size bowl and mix together. Let sit for 5-10 minutes to thicken.
  2. Heat up the butter or oil in a non-stick skillet. Fry the pancakes on low to medium heat for 3–4 minutes on each side. Don’t make them too big or they will be hard to flip.
  3. Add heavy whipping to a separate bowl and whip it until soft peaks form.
  4. Serve the pancakes with whipped cream and berries of your choice.

 

Keto Cabbage Stir-Fry

Ingredients- 25 oz. green cabbage, 51⁄3 oz. butter, 20 oz. ground pork or ground lamb, 1 tsp salt, 1 tsp onion powder, ¼ tsp ground black pepper, 1 tbsp white wine vinegar, 1 tbsp red curry paste, ½ yellow onion, finely chopped, 25 tsp fresh cilantro, 1 cup mayonnaise

Instructions

  1. Shred the cabbage with a knife or in a food processor as finely as possible.
  2. Fry the cabbage in half of the butter in a large frying pan or wok on medium high heat until softened, about 5-6 minutes.
  3. Add spices and vinegar. Sauté until fragrant. Place the cabbage in a bowl, and reserve.
  4. Melt the rest of the butter in the same pan. Add garlic, onion, and curry paste. Sauté for 1 minute. Add ground meat and sauté until the meat is cooked through and most of the liquid has evaporated.
  5. Lower the heat a little and add the cabbage back to the pan. Stir until everything is warmed through.
  6. Finish seasoning with salt and pepper to taste. Garnish with fresh cilantro before serving with a dollop of mayonnaise or sour cream.
