When trying to eat clean while juggling such a tight schedule, protein sources seem to be my biggest challenge. Fruits only need to be peeled, veggies can be steamed in the microwave, fats are easily poured from a bottle, and there are many choices for portable starches. One of my tricks for always having lean protein on hand only requires a crock pot, 1 package of chicken, and 1 packet of seasoning.

Just place the entire package of raw, boneless, skinless chicken breasts in the crock pot with your favorite seasoning packet. I prefer the McCormick’s Grill Mates in a variety of flavors. Add additional recommended ingredients on seasoning packet, cover, and cook on low for 7-8 hours until the chicken easily separates.

I throw this together either before leaving for work or before going to bed. I use the cooked chicken throughout the week for everything from salads to panini fillings. Easy cooking and easy clean-up. Easy, lean, clean protein.
