The diet of a figure competitor is crucial to the outcome of her physique on the day of her competition. We are dedicated to a healthy lifestyle all year and spend the several weeks leading up to the competition dialing in our nutrition in order to maximize our results. Competition prep requires our food choices to be limited and we are typically very short on time which makes it that much more important to have a convenient, competition friendly protein and veggie option on hand for a quick and healthy meal.

Figure Competitor Muffins

Ingredients:

18 egg whites
2 whole egg
pinch coarse sea salt and pepper
2 tsp olive oil
2 cup fresh asparagus, chopped in 1/2 inch pieces
1 small container mushroom, diced
1 red bell pepper, diced
1 small red onion, finely chopped
cooking spray or olive oil for the muffin tin

Directions:

1. Preheat oven to 350 degrees.
2. Heat 2 teaspoon of olive oil in a pan over medium heat. Add the asparagus, mushrooms, red bell pepper, and red onion, and cook for 5 minutes until softened. Allow to cool slightly. Meanwhile, in a medium bowl, whisk your eggs, egg whites, and salt and pepper. Stir in the cooled vegetables.
3. Spray 2 large muffin tins with cooking spray. Fill each muffin tin about 1/2 full with the egg mixture.
4. Sprinkle a pinch of coarse sea salt on the top of each muffin to taste and bake for 35-40 minutes, until the egg is no longer soft.
