Turkey Chili
Ingredients
1 Onion, chopped
1 Avocado, chopped
3 Green onions, chopped
3 Cloves garlic, minced
1 ½ lbs. Ground Turkey
2 (4 ounce) cans Green chile peppers, chopped
1 tbs. Ground cumin
2 tsp. Dried oregano
Ground cayenne pepper to taste
Ground white pepper to taste
Chopped cilantro to taste
3 (15 ounce) cans cannellini beans, rinsed and drained
32 oz. Chicken broth
1 c. Monterey Jack cheese, shredded
1 c. Corn
1 can Organic fire roasted diced chiles
Directions
In a large pot over medium heat, combine the onion, garlic and ground turkey and sauté for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cayenne and white pepper to taste and sauté for 5 more minutes.
Add two cans of the beans and the chicken broth to the pot (saving ½ c.). Take the third can of beans, rinse, add ½ c of chicken broth and puree them in a blender or food processor. Add this to the pot along with the corn, roasted chile and cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.
Garnish with avocado and green onions.
