This clean, healthy baked Irish oatmeal was made with lots of love.

Ingredients:

  • ½ cup blueberries
  • ½ apple, chopped
  • 1 cup uncooked Irish Oats
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1 packet Sugar in the Raw (~1T)
  • 1.5 cup fat free milk (or any milk you desire)
  • 1 egg
  • 1 tsp vanilla extract
  • Maple syrup

Directions:

Preheat the oven to 350° F.  Lightly spray a 8 x 8″ or 9 x 9″ ceramic baking dish with cooking spray; set aside.

In a medium bowl, combine the oats, baking powder, cinnamon, and salt; stir together.  In a separate bowl, whisk together the milk, egg, and vanilla extract.

Mix wet and dry ingredients in one bowl along with the chopped apple.

Pour the mixture into the baking dish and arrange the blueberries in a heart shape on the top. Sprinkle the Sugar in the Raw over the top.

Bake the oatmeal for about 60 minutes, or until the oatmeal has set. Turn the oven to broil and broil until the top is golden brown. Serve warm from the oven with a dash of maple syrup.
