• 2 (previously) baked sweet potatoes (med)
  • 4 whole eggs (that is all we had left)
  • 1/4 unsweetened shredded coconut
  • 1/2 c. frozen blue berries


I just mixed all ingredients by hand and cooked them just like pancakes in a skilled. They stuck to the pan and were not pretty, but they were delicious and we topped them with some coconut nectar as our syrup.
