A few days ago I was thinking about a wonderful recipe of a dish that is tasty, refreshing, easy to cook and inexpensive. I was going over recipes of iced cocktails, ice cream, snacks, and salads in my head. Also, I wanted to post something that you have never heard about. I started to search for not a common food, but still no less traditional. I decided to search for Russian food, because it is well-known for its diversity, extremely varied in technique, seasoning, and combination.

It is well-known that Russian food is diverse and delicious. And Russia is famous not only for its ice-cold winters but for hot summers. Okroshka is a perfect dish for a hot summer. It is a traditional dish of Russian national cuisine, a cold refreshing soup. The reason I decided to cook this dish is that summer this year is unbearably hot! I think this recipe is a perfect match for a torrid summer day. Okroshka not only perfectly relieves of the feeling of hunger, but also gives you a feeling of lightness. It contains a great number of vitamins and nutrients that necessary for a person during the summer period. Thanks to its components okroshka can help to improve digestion. It is very healthy and low-calorie dish. Moreover, it is eaten cold and it refreshes as well as a mojito.

It is very easy and fast in cooking! You do not need to have special skills or education to prepare this soup. Usually, it is cooked with kefir or kvass ( a non-alcoholic beverage made from fermented black or rye bread). It is not very easy to find kvass outside of Russia, but you can try to search for them Ukrainian and Russian shops. All other ingredients are crumbled into small pieces and mixed. You should better always dice all ingredients just before eating and eat it fresh after cooking, thus, all ingredients will remain crispy.  So let’s speak about the ingredients. To cook Okroshka you should have different vegetables, such as cucumbers, spring onions and radishes, previously boiled potatoes, eggs, and a cooked meat. You may use any kind of meat to your taste, for example, beef, ham, sausages, veal, etc.

The main ingredient of my recipe of this cold soup is beef.

 

Ingredients:

300 grams of beef fillet

2 radishes

2 potatoes

1 cucumber

4 chicken eggs

1 bunch green onions

500 ml of kefir

salt

 

Method:

 

First of all, boil the potatoes in a saucepan and cool it. Beef and eggs should be also previously cooked (boiled). After that, take radishes, cucumber, and spring onions, wash it and dice it. Boiled cold beef cut into small cubes. Do not forget to shell eggs and dice it. Mix all ingredients in a deep bowl, add salt, pour kefir. Actually, our okroshka is ready! You can also garnish it with sour cream, mustard and dill.

It is surprisingly tasty and refreshing cold soup of Russian origin, which will be a perfect main dish. I am sure it will become your favorite soup, just try it and serve it to your friends and family. You will see how addictive it is.

First courses are always a good choice when you are hungry besides it is good for one`s stomach. Trying the first course, which is traditional for another country, is a double pleasure.
