• 1 cup chopped zucchini
  • 1 cup chopped carrots – save tops to add to soup
  • 1 cup chopped celery – save tops to add to soup
  • 1 cup chopped green beans
  • 4 pieces of chicken – I used thighs but breasts will work too
  • chicken stock
  • water
  • coconut oil
  • Mrs. Dash


Add chopped veggies and tops to pot of chicken stock (enough to cover veggies). Cook veggies till desired. I like mine crunchy and tend to reheat, so I just let them sit on medium while making the chicken.

Sear chicken in a pan with coconut oil (once around the pan) for 4 min on each side (flipping 2x – for a total of 16 min. seasoning with a sprinkle of Mrs. Dash each flip) Depending on how thick the chicken is, this should suffice. If not, you can continue to cook this way, or another way. Once chicken is cooked, chop chicken into same size pieces as veggies. Add to pot. Add water if needed. Let sit covered for 10-15 min.
