• 1 ½ cup rolled oats
  • 1 tsp ground cinnamon
  • 1 T honey
  • 1T coconut oil
  • 1 medium banana
  • 1 cup blueberries
  • ¼ cup chopped walnuts
  • 1 cup almond or soy milk (add more or less depending on desired consistency)
  • ½ tsp vanilla extract


Preheat oven to 375°. Spray 4 ramekins with cooking spray.

Mix oats, cinnamon and honey in a large bowl.

Mash banana with a fork and place in a separate bowl with coconut oil, blueberries, and vanilla extract.

Fold wet ingredients into dry ingredients, and then add almond milk.

Mix all ingredients and place into muffin tins.

Bake for 15 to 17 minutes (depending on desired moisture).

Remove from oven and let cool for at least 5 minutes.

Sprinkle chopped walnuts on top and enjoy!
